Vegetable Kebabs with Peanut Sauce

These BBQ Veggie Skewers with Peanut Sauce are a great idea for a summer dinner! Simply toss the veggies in coconut oil, season, thread onto skewers and BBQ to perfection πŸ˜‹

Vegetable Kebabs with Peanut Sauce


1 x eggplant
1 x zucchini
1 x large red capsicum
1 x red onion
1 Tbsp melted coconut oil
ΒΌ tsp salt

Peanut Sauce:

150g peanut butter
1 Tbsp tamari sauce
1 Tbsp honey
1 tsp dried chili
1 tsp fresh ginger, grated
1 garlic clove, crushed
1 tsp fish sauce
150ml coconut milk
Juice of 1 lime


  1. First make the peanut sauce by adding all ingredients to a bowl and mixing well.
  2. Wash and cut the vegetables into large bite-sized pieces and thread each piece onto metal skewers. Brush coconut oil over the skewers and season with salt.
  3. Place into the oven set at 180 degrees and roast until tender, about 10-12 minutes or alternatively grill on the BBQ.
  4. Serve the vegetable kebabs with the peanut sauce.
