Vegetable Kebabs with Peanut Sauce
Ingredients:
1 x eggplant
1 x zucchini
1 x large red capsicum
1 x red onion
1 Tbsp melted coconut oil
ΒΌ tsp salt
Peanut Sauce:
150g peanut butter
1 Tbsp tamari sauce
1 Tbsp honey
1 tsp dried chili
1 tsp fresh ginger, grated
1 garlic clove, crushed
1 tsp fish sauce
150ml coconut milk
Juice of 1 lime
Instructions:
- First make the peanut sauce by adding all ingredients to a bowl and mixing well.
- Wash and cut the vegetables into large bite-sized pieces and thread each piece onto metal skewers. Brush coconut oil over the skewers and season with salt.
- Place into the oven set at 180 degrees and roast until tender, about 10-12 minutes or alternatively grill on the BBQ.
- Serve the vegetable kebabs with the peanut sauce.
