Healthy chocolate brownie....need I say more!? This chocolate brownie is absolutely the Ultimate Chocolate Brownie! It tastes incredible - no one would guess it is a healthy version of. It’s packed full of nutrients, gluten-free, dairy-free, refined sugar free and tastes amazing!
It’s perfect for a weekend treat, pop a piece into the kids lunch box, or serve it warm with yoghurt or cream for a tasty dessert the whole family will enjoy!
The Ultimate Chocolate Brownie
Ingredients:
1 cup dates
3 Tbsp maple syrup
100g of coconut oil (1/2 cup) melted
2 eggs
1 tsp vanilla
1/2 cup cocoa powder
1/4 cup protein powder*
1/4 cup ground almonds
1/2 tsp baking soda
150g dark choc chips (skip the chocolate if you prefer)
Instructions:

Preheat oven to 160°C and line a slice tin* with baking paper.

Put dates in a large bowl, cover with boiling water. Leave to stand for 10 minutes and then drain*.

Mash softened dates with a fork to break them up to a creamy consistency. Stir in the coconut oil, eggs, maple syrup and vanilla until well combined. Then add the dry ingredients and stir until smooth. Stir in the chocolate chips or chunks.

Smooth into prepared tin and bake until it is set in the middle and begins to come away from the sides of the tin (about 35 minutes). Cool before cutting into squares. Store in a sealed container for 4-5 days.
* The tin used was 9cm x 25cm.
* Soak the dates in boiling water for 10 minutes, then pour into a sieve to drain. Let them drain for a few minutes and slightly push down on the dates to squeeze out excess water.
* If you don’t have protein powder, swap it for ground almonds, or any other flour would work. The protein powder provides a little extra sweetness to the recipe. So if you omit the protein powder, add in an extra 1/2 - 1 Tbsp of maple syrup.
