Spiced Christmas Cookies

Spiced Christmas Cookies

¼ c coconut sugar
¼ cup oil
1 egg
1 tsp vanilla
1 tsp ground cinnamon
½ tsp nutmeg
½ tsp ginger
½ c oats
3/4 c g almonds
Pinch sea salt
½ tsp baking soda
¼ c sultanas
¼ c walnuts

 

Instructions:

1. Mix together the coconut oil and coconut sugar until smooth. Add the egg and vanilla extract and stir until smooth.

2. Add the cinnamon, nutmeg, ginger, oats, ground almond, salt, and baking soda to the wet ingredients. Mix until well incorporated. Fold in the chopped walnuts and sultanas.

3. Preheat the oven to 175 degrees C. Scoop out a tablespoon size amount of dough and roll int a ball. Place on the a lined baking sheet and press down slightly.

4. Bake for about 12-15 minutes or until just beginning to turn golden brown around the edges.

5. Store cookies in an airtight container at room temperature or in the refrigerator up to 3 days.
