Seed Cracker

Seed Crackers! This crispy seed cracker with a crunchy pop of sesame seeds! Great for the cheese platter as well as a snack, or good enough for breakfast!

Ingredients

1/3 cup Almond meal

1/3 cup Sunflower seeds, lightly toasted

1/3 cup Pumpkin seeds, lightly toasted

1/3 cup Chia seeds

1/3 cup Shaved coconut, lightly toasted (can be subbed for sesame seeds or flax seeds)

1 Tbsp Psyllium husk powder
1 Tsp Salt

 

1/4 cup Blue Coconut oil, melted

1 Cup Boiling water

 

Method

 

Thoroughly mix dry ingredients together then add coconut oil and boiling water. Continue to mix until it turns thick, and ingredients stick together.

Transfer the mixture onto a sheet of baking paper, cover with another sheet of paper and flatten it out to fit the baking tray. Remove the top baking paper sheet and sprinkle with coconut sugar (optional).

Bake at 150C for 45 - 60 minutes or until crispy and golden brown.

Cool down and break crackers into pieces of desired size. Keep in airtight container.
