Raspberry Chocolate Coconut Cups

Dr Julie Bhosale's latest delicious creation will give you a long lasting energy boost just when you need it.
All Dr Julie's recipes are healthy and wholesome, this one is also dairy-free and gluten-free. It comes with a warning though - they are highly addictive!!
Ingredients:
5Â Tb of Blue Coconut oil (heaped)
1/2 C of Coco Powder
1Â Tb of honey
Dash of vanilla essence
Filling:
1 Cup of frozen raspberries
2 Tb Blue Coconut coconut oil
½ cup of shredded coconut
1 Tb honey
1 Tb coconut milk
Directions:
1. Chocolate.
Melt coconut oil on low heat and quickly mix in other ingredients. You may find you can take it off the heat to mix in the other ingredients, the less temperature the better! Pour into mini silicon muffin cups and place in freezer.
2. Filling
Place all ingredients into a small blender. Spoon filling on top of chocolate base and place in freezer
3. Finish Top
Spoon the remaining chocolate on the top and freeze until set.
4. Enjoy!
