Raw Dark Chocolate Energy Slice
Ingredients:
1 cup dates
1/2 cup almonds
1/4 cup walnuts
1/4 cup cashews
¼ cup sunflower seeds
¼ cup pumpkin seeds
¼ cup desiccated coconut
3 Tbsp coconut oil, melted
3 Tbsp cacao powder
½ tsp vanilla
1/4 cup dried cranberries
Topping:
3 Tbsp coconut oil, melted
3 Tbsp peanut butter
1 Tbsp maple syrup or honey
2 Tbsp cacao powder or 100% cocoa powder
Instructions:
- Soak the dates in boiling water for 5 minutes to soften. Drain well.
- Add all the base ingredients to a food processor or high-powered blender. Process until chunky.
- Add mixture into a 8x4 inch loaf pan lined with parchment paper, pressing evenly towards the sides of the pan.
- To make the chocolate topping, mix all the ingredients together and then pour over the base.
- Leave in the freezer for 1 hour to set before slicing.
