Raw Dark Chocolate Energy Slice

Raw Dark Chocolate Energy Slice

Ingredients:

1 cup dates
1/2 cup almonds
1/4 cup walnuts
1/4 cup cashews
¼ cup sunflower seeds
¼ cup pumpkin seeds
¼ cup desiccated coconut
3 Tbsp coconut oil, melted
3 Tbsp cacao powder
½ tsp vanilla
1/4 cup dried cranberries

Topping:
3 Tbsp coconut oil, melted
3 Tbsp peanut butter
1 Tbsp maple syrup or honey
2 Tbsp cacao powder or 100% cocoa powder

Instructions: 

  1. Soak the dates in boiling water for 5 minutes to soften. Drain well.
  2. Add all the base ingredients to a food processor or high-powered blender. Process until chunky.
  3. Add mixture into a 8x4 inch loaf pan lined with parchment paper, pressing evenly towards the sides of the pan.
  4. To make the chocolate topping, mix all the ingredients together and then pour over the base.
  5. Leave in the freezer for 1 hour to set before slicing.
