Raspberry Coconut Bliss Balls

These delicious Raspberry Coconut Bliss Balls are the perfect back to work or back to school snack! You can take them to work with you for a yummy morning or afternoon snack, or grab a couple before you head out the door for a quick and easy brekkie.

Ingredients:

1 cup cashews, roasted
1 cup ground almonds
Pinch of sea salt
1 cup fresh raspberries
1/2 cup dates
2 Tbsp Blue Coconut Coconut Oil
1 tsp vanilla extract
1/4 cup desiccated coconut

Instructions:

  1. If your cashews are raw roast them in the oven at 160 degrees for 10 minutes or until golden. Watch them carefully that they do not burn.

  2. Place the cashews, ground almonds and salt in a blender or food processor and blend into fine crumbs.

  3. Add the raspberries, dates, coconut oil and vanilla to the blender or food processor and pulse until combined.

  4. Pour the desiccated coconut into a medium sized bowl. Take a tablespoon of mixture roll it into a ball and coat it in the desiccated coconut.

  5. Leave the balls in the fridge to set for an hour.

  6. Store in the fridge or freezer.

Makes approx 15 balls
