YUM! Raspberry Coconut Bliss Balls are the perfect on-the-go snack! You can take them to work with you for a yummy morning or afternoon snack, or grab a couple before you head out the door for a quick and easy brekkie. These bliss balls are full of antioxidants from the raspberries as well as complete protein and healthy fats from the nuts and coconut oil to keep you satisfied for hours.
Raspberry Coconut Bliss Balls
Ingredients:
1 cup cashews, roasted
1 cup ground almonds
Pinch of sea salt
1 cup fresh raspberries
1/2 cup dates
2 Tbsp Blue Coconut Coconut Oil
1 tsp vanilla extract
1/4 cup desiccated coconut
Instructions:

If your cashews are raw roast them in the oven at 160 degrees for 10 minutes or until golden. Watch them carefully that they do not burn.

Place the cashews, ground almonds and salt in a blender or food processor and blend into fine crumbs.

Add the raspberries, dates, coconut oil and vanilla to the blender or food processor and pulse until combined.

Pour the desiccated coconut into a medium sized bowl. Take a tablespoon of mixture roll it into a ball and coat it in the desiccated coconut.

Leave the balls in the fridge to set for an hour.

Store in the fridge or freezer.
