If you feel like you need a new breakfast idea in your life right now, look no further than this Peanut Butter & Coconut Granola. Enjoy it with yoghurt, almond milk and fresh fruit for brekkie or on it’s own as a tasty afternoon snack.
Peanut Butter & Coconut Granola
Ingredients:
3 Tbsp melted coconut oil
2 Tbsp of honey
2 Tbsp peanut butter
1 cup of whole and chopped nuts (almonds, cashews, walnuts, pecans, macadamia etc)
1/2 cup of seeds (sunflower, pumpkin, sesame, flaxseeds)
1 cup oats
1/2 cup desiccated coconut
1 tsp ground cinnamon
1/2 cup dried fruit - dates, cranberries, sultanas etc.
Instructions:
- Preheat oven to 150degC. In a medium bowl, mix the honey, coconut oil, peanut butter and vanilla, set aside.
- In a large bowl mix together the nuts, seeds, oats, coconut and cinnamon. Add the honey mixture to the dry ingredients and mix well
- Spread the muesli out on a prepared oven tray. Bake for 15 – 20 minutes, until lightly toasted.
- Add the dried fruit and then allow to cool completely before storing in an airtight container.
