Parmesan Roasted Carrots

Parmesan Roasted Carrots…yes please! So yummy you could eat them like a bag of chips 😋

Parmesan Roasted Carrots


2 carrots
1 Tbsp coconut oil
½ teaspoon salt
1/2 tsp mixed herbs
¼ cup parmesan cheese, grated


  1. Preheat oven to 200˚C.
  2. Peel and slice the top and bottom off of carrots then slice them in half, slice each half into thirds lengthwise.
  3. In a large bowl, mix ingredients with carrot sticks, except for the cheese.
  4. Spread on a baking sheet.
  5. Bake for 15 minutes.
  6. Remove from the oven, toss with a spatula and shower evenly with the cheese. Return to the oven for 10 minutes, turn again with a spatula and roast for a final 5 minutes, until the carrots are golden and crispy in places.
