Chocolate Molten Lava Cake is an ultimate winter dessert. This recipe is indulgent, rich and delicious while also containing no gluten, dairy or refined sugar.
Molten Lava Cakes
Ingredients:
1/4 cup coconut oil, melted
2 Tbsp maple syrup
Pinch of sea salt
4 Tbsp coconut milk
1/2 tsp vanilla extract
2 eggs
1/4 cup cocoa powder
3 Tbsp ground almonds
1 Tbsp tapioca flour
Instructions:
- Preheat the oven to 210 degrees C. Prepare four ramekins with coconut oil. Dust with cocoa powder
- Mix together all the wet ingredients until combined. Fold through the cacao, ground almonds and tapioca flour.
- Divide the batter equally among the four ramekins, or 2 large ones. Place on a baking sheet and put into the oven. Bake for 8-10 minutes until set. 8 minutes if your ramekins are small and 10 if they are big. Serve warm.
