Lemon Garlic Prawn Skewers

Lemon Garlic Prawn Skewers

2 cloves garlic
1 teaspoon dried oregano
½ tablespoon olive oil
1 teaspoon chopped coriander
½ lemon (juiced)
Salt and pepper to season
300g prawns (tails on, skin peeled)

Instructions:

  1. In a medium-sized bowl, mix together all ingredients except for the prawns.
  2. Add prawns to the marinade into a bowl and toss to combine.
  3. Thread 5-6 prawns through wooden skewers.
  4. Heat 1 Tbsp of coconut oil to a flat pan on medium heat. Cook each skewer for 1 minute each side until they are no longer grey.
  5. Serve immediately.
