This Kumara, Bacon and Blue Cheese Salad is a simple summer salad that you can take along to BBQs, picnics or serve it up with dinner at home as a yummy and healthy side.
1 medium sized kumara, chopped into bite-sized pieces
1/2 Tbsp coconut oil
Salt and pepper, to season
4 bacon rashes
1 orange, peeled and cut into bite-sized pieces
2-3 handfuls of rocket
50g blue cheese
1/4 cup of walnuts
1/2 a lemon
1 Tbsp olive oil
Pre-heat oven to 180 degrees Celsius.
Line a baking tray with baking paper and place the kumara, coconut oil and salt & pepper. Mix to coat.
Roast for 25-30 minutes or until tender.
Place the bacon on a lined baking tray and grill for 10 mins, turning halfway through.
To serve, toss roast kumara with rocket, orange, bacon, walnuts and blue cheese. Squeeze the lemon juice over the top, drizzle with the olive oil and season with salt and pepper. Toss to combine.
