Keto MCT Fat Bites

If you're looking for a snack that's delicious, nutritious and won't spike your blood sugar levels...these Keto MCT Fat Bites are for you!

Ingredients:

1/4 cup coconut oil
1/4 cup peanut butter
1/4 tsp cinnamon
1 tsp vanilla extract
3 Tbsp MCT oil
1/2 Tbsp maple syrup or stevia to sweeten
1 tsp cacao powder
Top with crushed nuts or sesame seeds

 Instructions:

  1. In a medium, microwave-safe bowl, combine the coconut oil and peanut butter. Heat in the microwave for 30 seconds. Remove, stir and place back in the microwave and repeat until completely melted.
  2. Add the cinnamon, vanilla, MCT oil and maple syrup and whisk until combined. Evenly distribute the into the prepared mini muffin tins, leaving about 2 Tbsp left over. Mix in the cacao powder with the remaining mixture. Pout this over the top of each bite. 
  3. Sprinkle with sesame seeds. Place in the freezer for at least 1 hour.
