There is nothing better than fresh peaches! They are great in desserts, baking or added to a salad like we have in this Grilled Peach and Burrata Salad.
Ingredients:
1/4 red onion, thinly sliced
1 Tbsp white vinegar
1/2 tsp coconut sugar
2 ripe peaches, sliced
1 courgette, sliced
1 Tbsp coconut oil
1 ball burrata cheese
2 cups rocket
1 Tbsp chopped peanutsÂ
Instructions:
First prepare the onion by placing it in a bowl and adding the vinegar and sugar. Leave to pickle while you make the rest of the salad.Â
Heat the coconut oil in a medium fry-pan on high heat. Place the peaches and courgette slices in the pan and cook for 1 minute each side, until lightly golden. Remove from heat.
Place the rocket in a serving bowl. Top with the grilled courgette, peach, red onion, burrata, peanuts and any remaining pickling vinegar. Season with salt and pepper.
