Greek Vegetable Frittata

This recipes takes the timeless classic Frittata and jazzes it up with some yummy Greek flavours. It’s the perfect lunch option to take to work or a quick and easy family dinner meal.

Ingredients:

1 Tbsp coconut oil
½ a red onion, diced
1 medium courgette, diced
1 cup cherry tomatoes, halved
8-10 medium eggs, beaten
½ cup feta cheese, crumbled + extra for garnish
¼ cup pitted kalamata olives, diced
Salt and pepper to season

Instructions:

Preheat oven to 180 degrees C. Heat coconut oil in a medium pan.
Add the red onion and courgette and cook for 3-4 minutes until softened. Pour into a baking dish. 

In a large bowl, whisk eggs and feta cheese. Season with salt and pepper. Pour the egg mixture to the baking dish over top of the courgette and onion. 

Sprinkle the tomato halves and olives over the top.
Place the dish on a middle rack in the oven and bake for 20 minutes, or until the middle is set.
