Easy Rocky Road

Here is a ridiculously delicious and easy Rocky Road recipe! It’s an incredibly versatile recipe that you can easily adapt to suit what ingredients you have in your cupboard.

If you want to keep the recipe relatively healthy, use a chocolate that is 50% cacao or above and add raw and unrefined ingredients such as nuts and dried fruit.

Ingredients:

2 x 250g blocks of good quality chocolate, roughly chopped
1 Tbsp coconut oil
¾ cup of your favourite nuts
½ cup dried cranberries
150g marshmallow
1 cup shortbread, broken into small pieces (optional)

Instructions:

  1. Line a brownie tin with baking paper.
  2. Melt the chocolate in a heatproof bowl over a pan of simmering water. When melted, stir in the coconut oil. 
  3. Add the nuts, dried cranberries, marshmallows and shortbread (if using), into the melted chocolate and mix until well combined.
  4. Pour into the tin. Place in the fridge for 2 hours to set. Once set cut into small pieces.
