The perfect roast vegetables! A sprinkle of mixed herbs, paprika and of course plenty of coconut oil. Baked to perfection!
1 small kumara
1 red capsicum
1/2 tsp dried mixed herbs
1 Tbsp coconut oil
Salt and pepper to taste
- Pre-heat oven to 180 degrees C. Line a baking tray with baking paper.
- Chop vegetables into bite-sized pieces and place on the oven tray.
- Sprinkle over the mixed herbs, salt and coconut oil. Toss to combine.
- Place into oven and bake for 20-25 minutes, or until tender.
- Serve immediately.
