If you’re looking for an easy and delicious weeknight dinner idea, make Beef Nachos! So easy to make, and we love how the kids can get involved with serving up their plates and adding their fave toppings
Ingredients:
1 Tbsp coconut oil
1/2 an onion
500g beef mince
1 garlic clove, grated
1 Tbsp taco seasoning (paprika, cumin, garam masala)
200g can of diced tomatoes
1 can red kidney beans
Salt and pepper to season
To serve:
2 x tomatoes, diced
1 baby cos lettuce, shredded
220g corn chips
100g sour cream
1 avocado
Instructions:
Heat coconut oil in a frying pan over medium heat. Add onion and garlic cook for 3 minutes or until softened. Add mince to brown all over. Stir through the taco seasoning and cook for a further 2 minutes.
Add kidney beans, then the tomatoes and simmer for five minutes until thickened. Season with salt and pepper.
Serve with the tomato, lettuce, corn chips, sour cream and avocado. Season to taste.
