Crispy Skin Salmon

What’s your favourite way to cook salmon? We love to crisp up the skin on the BBQ in a little coconut oil and squeeze fresh lemon juice over it before serving 😋

Serve this crispy skin salmon with a fresh salad and oven baked potatoes for a nourishing and delicious dinner!

Crispy Skin Salmon

Ingredients:

2 x salmon fillets
Salt and pepper to season
1 heap teaspoon coconut oil
1/4 fresh lemon

Ingredients:

1. Pat the salmon fillets dry with paper towels, then season well on both sides with salt and pepper.

2. Heat the coconut oil in a non-stick frying pan over medium-high heat. Place the salmon fillets into the pan, skin side down. Press down firmly to stop the edges curling up. Cook for 2-3 minutes, or until the salmon has changed colour three quarters of the way up the sides and the skin is crispy. Turn over and cook for a further 30 seconds.

3. Remove from the pan, set aside and keep warm. Serve with fresh lemon wedge.
