Christmas Chocolate Gingerbread Truffles

These Chocolate Gingerbread Truffles are a great little treat this Christmas! You could pop them into a gift box to give out as presents or put them out on the dinner table on Christmas Day  😍🎄🎅👪

Christmas Chocolate Gingerbread Truffles

Ingredients:

1 cup dates
2 Tbsp coconut oil
2 Tbsp cacao powder
½ tsp ground ginger
½ tsp ground cinnamon
¼ tsp nutmeg
1 tsp vanilla
¼ cup desiccated coconut – to roll the truffles in

Instructions:

  1. Add all ingredients, except desiccated coconut, to the food processor. Blend, stopping to scrape the sides a few times. Mixture should be a thick, sticky dough that can easily be shaped into a ball.
  2. Roll the dough into balls about 1 tablespoon in size, roll in the desiccated coconut to coat.
  3. Freeze the truffles for at least an hour, letting the dough harden.
