This delicious homemade Beef & Vegetable Pie is comfort food at it’s best. It’s a yummy nutritious winter meal that the whole family will enjoy eating.
Beef & Vegetable Pie
Ingredients:
Topping:
400g kumara, peeled and diced
2 carrots, diced
Filling:
1 small onion, finely chopped
2 garlic cloves, minced
1 Tbsp coconut oil
500g beef mince
1/2 tsp paprika
1/2 tsp curry powder
1 carrot finely chopped
1 broccoli, chopped into bite sized pieces
1 tin crushed tomatoes
1 Tbsp tamari sauce
1 tin of corn
Salt and pepper to season
1 cup grated cheese
Instructions:
1. Cook the kumara and carrot in a pot of boiling water for about 20minutes or until soft. Drain, mash with a little salt.
2. Heat the oil in a large fry-pan on medium heat. Cook onion and garlic for 1-2 minutes. Add beef mince and cook for 3-4 minutes. Add the spices and chopped vegetables. Cook for 5 minutes until vegetables are soft.
3. Add the crushed tomatoes and corn. Season with salt and pepper.
4. Transfer the filling to a baking dish and spread the kumara and carrot over the top. Sprinkle over the grated cheese.
5. Cook for 20 minutes at 180 degrees or until cheese is golden.
