These Beef Nachos with Kumara Chips are a healthier twist on traditional nachos! We’ve swapped the corn chips for roast kumara and packed the beef mince full of veggies. Topped with sour cream and avocado, these Nachos are a great weekday dinner that the whole family will enjoy.
Ingredients:
2 small kumara
1 Tbsp coconut oil
1 tsp mixed herbs
1/2 tsp Himalayan salt
1 Tbsp coconut oil
1 small onion, finely diced
2 small garlic cloves, crushed
1 carrot, grated
1 zucchini, grated
1 tsp dried herbs
1 tsp paprika
1 tsp curry powder
400g beef mince
1 tin of chopped tomatoes
1/2 tin of corn
1 Tbsp of tamari sauce
2 Tbsp tomato paste
Salt and pepper to taste
Greek yoghurt or sour cream to serve
Avocado to serve
Instructions:
1. Pre-heat the oven to 160 degrees. Line a baking tray with baking paper.
2. Thinly slice the sweet kumara and place on to the baking tray. Try to keep the slices in a single layer so they can crisp up. Add the coconut oil, mixed herbs and salt, mix well.
3. Roast in the oven at for 30 minutes or until crisp. Stir every 10 minutes .
4. Heat the second measure of coconut oil in a large pan on medium heat. Add the onion and stir fry until soft.
5. Add the garlic, herbs, spices, carrot and zucchini. Continue to cook for another 3 minutes. Add the beef mince, cook for a further 3 minutes and br4ak up the mince.
6. Once the mince is cooked, add the tinned tomatoes, tamari ad tomato paste. Season with salt and pepper to taste.
7. Serve the sweet potato chips with the tomato beef mixture and top with Greek yoghurt and avocado.
