Banana, Oat & Coconut Pancakes

These Banana, Oat & Coconut Pancakes are a healthy and filling breakfast and can be made in minutes. Serve them with fresh fruit, coconut yoghurt and a drizzle of honey or maple syrup.

Banana, Oat & Coconut Pancakes

1 ripe banana
1 egg
½ tsp cinnamon
2 Tbsp oats
2 Tbsp coconut

1. Place all ingredients into a blender and blend until smooth.
2. Heat a teaspoon of coconut oil in a pan on medium to high heat. Scoop out 1/3rd of a cup of batter and pour it into the hot pan. 
3. Leave the pancake to cook for 2 minutes on each side.
4. Serve with yoghurt, fresh fruit, and maple syrup.
