This Banana Cinnamon French Toast gives a sweeter and fruitier flavour compared to traditional French Toast. I love that banana is providing the sweetness so there is no need to add maple syrup, just a dashing of peanut butter and some extra fruit and you have the perfect delicious and nutritious breakfast!
Ingredients:
1 ripe banana, mashed
1 egg
1/4 tsp cinnamon
Pinch of salt
3 slices of bread - we used Vogel's
1 tsp coconut oil
Instructions:
Mash the banana, whisk in the egg, cinnamon and salt. Dip each slice of bread in the banana egg mixture.
Heat the coconut oil in a large fry pan on medium heat. Cook the French toast for 2-3 minutes each side until golden.
