Banana & Caramel Muffins

Looking for a yummy new Easter recipe to try this year? How about these Banana Muffins with a gooey caramel center!

 

Banana & Caramel Muffins

Ingredients:

2 ripe bananas
2 eggs
3 Tbsp coconut oil, melted
2 Tbsp maple syrup
1 tsp vanilla
Pinch of sea salt
¾ cup ground almonds
¼ cup coconut flour
½ tsp baking soda
1 tsp cinnamon
1 Tbsp lemon juice

Date caramel:
½ cup dates
½ tsp vanilla
¼ cup coconut milk
1 Tbsp juice of lemon

Instructions:

  1. Preheat oven to 180°C.
  2. In a large bowl, mash the bananas. Add the eggs, coconut oil, maple syrup and vanilla then mix well.
  3. Add the rest of the dry ingredients and mix until combined. Set aside.
  4. Soak the dates in boiling water for 5 minutes, then drain. Blend all the date caramel ingredients together. 
  5. Spoon the muffin mixture into 8 prepared muffin tins, only 1/3 filling each tin. 
  6. Add a blob of the date caramel on top then cover with the remaining muffin mixture. 
  7. Bake for 15-20 minutes until a light golden brown and a skewer comes out clean.
  8. Store in an airtight container in the fridge.
