Banana & Caramel Muffins
Ingredients:
2 ripe bananas
2 eggs
3 Tbsp coconut oil, melted
2 Tbsp maple syrup
1 tsp vanilla
Pinch of sea salt
¾ cup ground almonds
¼ cup coconut flour
½ tsp baking soda
1 tsp cinnamon
1 Tbsp lemon juice
Date caramel:
½ cup dates
½ tsp vanilla
¼ cup coconut milk
1 Tbsp juice of lemon
Instructions:
- Preheat oven to 180°C.
- In a large bowl, mash the bananas. Add the eggs, coconut oil, maple syrup and vanilla then mix well.
- Add the rest of the dry ingredients and mix until combined. Set aside.
- Soak the dates in boiling water for 5 minutes, then drain. Blend all the date caramel ingredients together.
- Spoon the muffin mixture into 8 prepared muffin tins, only 1/3 filling each tin.
- Add a blob of the date caramel on top then cover with the remaining muffin mixture.
- Bake for 15-20 minutes until a light golden brown and a skewer comes out clean.
- Store in an airtight container in the fridge.
