A simple salad recipe is a must this summer! Something you can make a head of time, pop in the fridge and pull out when it’s time to eat. This Asparagus salad is just that!
Ingredients:
1 bunch of asparagus
1 tsp coconut oil
1 punnet of cherry tomatoes
200g mozzarella balls
2 Tbsp fresh basil leaves
1 Tbsp lemon zest
1 Tbsp lemon juice
2 Tbsp olive oil
Salt and pepper to season
Instructions:
- Pre-heat the oven to 180 degrees. Line a baking tray with baking paper. Wash and trim asparagus and place on the oven tray. Drizzle with coconut oil and season with salt and pepper. bake for 10mins turning halfway through.
- While asparagus is cooking, combine the basil, lemon zest, juice and olive oil in a small bowl. Set aside.
- Place asparagus o a serving plate and top with tomatoes and mozzarella balls. Drizzle over the basil and lemon juice mixture before serving.
- Sprinkle a little salt and black pepper to taste.
