If you're craving restaurant- quality chicken teriyaki but also enjoy a nice night in, this Asian Chicken Noodle recipe is the next best thing!
200g rice noodles
1 tsp sesame oil
2 x baby bok choy, thinly sliced
1/2 an avocado
1 tsp black sesame seeds
300g chicken thigh or breast, sliced into bite-sized pieces
1/4 cup soy sauce
2 Tbsp hoisin sauce
1 Tbsp sweet chili sauce
1 Tbsp ginger peeled and grated
Pinch of chili flakes to taste
Juice of 1 lime
1/2 Tbsp coconut oil
- Bring a medium pot of water to the boil. Pour over the rice noodles and leave to sit for 7 minutes. Drain and return to the pot with the sesame oil. Mix well.
- In a small bowl, whisk together all of the sauce ingredients. Set aside.
- Heat 1 Tbsp coconut oil in a fry pan on medium high heat. Cook the chicken for 6 minutes tossing occasionally. Add the chicken sauce and cook for a further 2 minutes. Remove from the heat.
- To assemble, place the noodles on a plate, top with slice bokchoy, chicken, avocado and sesame seeds.
