Apple, Cinnamon & Yoghurt Muffins

These Apple, Cinnamon Yoghurt Muffins are an easy grab-and-go breakfast or a nutritious afternoon treat with a cup of tea. They are freezer friendly too so you’ve always got a tasty treat on hand.

Ingredients:

2 1/2 cups flour
2 tsp baking powder
1/2 tsp baking soda
1/2 cup coconut sugar
1 Tbsp cinnamon
Pinch of salt
2 eggs, beaten
2/3 cup coconut oil, melted
1 cup Greek yoghurt
1/4 cup of milk
2 grated apples

Instructions:

  1. Pre-heat the oven to 180 degrees Celsius. 
  2. Combine the dry and ingredients in a large bowl.
  3. Combine the wet ingredients and grated apple in a medium bow. Fold through the dry mixture.
  4. Spoon the batter into muffin cases and bake for 17 to 20 minutes until golden and a skewer pushed into the center comes out clean.
